“Share & Pair Sundays” – Spring Citrus & Berry Salad

Ingredients:

Base:

2 cups baby spinach

2 cups arugula

Fruits:

1 blood orange, peeled and sliced

1/2 cup fresh strawberries, sliced

1 avocado, sliced

Crunch:

1/4 cup toasted almonds or pistachios

Cheese:

1/4 cup crumbled goat cheese or feta

Honey-Citrus Vinaigrette:

2 tablespoons orange juice

1 tablespoon honey

3 tablespoons olive oil

1 teaspoon Dijon mustard

Salt and black pepper to taste

Instructions:

  1. In a large salad bowl, combine baby spinach and arugula.
  2. Arrange blood orange slices, strawberries, and avocado over the greens.
  3. Sprinkle with toasted almonds or pistachios for crunch.
  4. Crumble goat cheese or feta over the top.
  5. In a small bowl, whisk together orange juice, honey, olive oil, Dijon mustard, salt, and pepper until well combined.
  6. Drizzle the vinaigrette over the salad just before serving.
  7. Toss gently and enjoy.

Serving Suggestions:
